About Our Organic Fuyu Persimmons

Nicknamed the “Apple of the Orient” – persimmons are an exceptionally sweet fruit available only during the fall and the early winter. The persimmon is a fruit that comes from certain trees in the genus Diospyros.

Like the tomato, it is technically a berry but rarely considered one. There are two main varieties available: the Hachiya (say ha-Chee-ya) and Fuyu (say Foo-yoo).

Rausch Persimmon Farms grows the Fuyu variety, a non-astringent, sweet tasting fruit. Although these were originally grown in Japan, California now provides 95% of the United States market.

Approximately 200 acres of Persimmons are in production in San Joaquin County. Rausch Persimmons Farms produces 1% of this total, with a 110 tree orchard growing on just under three acres in Lodi, California. Our fruit is organic in that we apply no pesticides or fertilizers.

Fuyu Persimmons can be eaten like an apple; or peeled and served or sliced and added to a salad.

 

Try one of these recipes:

Persimmon Muffins

4 tablespoons butter
1 cup sugar
2 eggs
1 cup persimmon pulp
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon cloves
½ cup raisins
Cream butter and sugar. Add eggs one at a time,
beating well after each. Combine dry ingredients
and stir into creamed mixture. Add nuts and mix
well. Bake in loaf pan at 350 degrees for 25-30
minutes. Cool and enjoy.

Persimmon Pudding

2 cups strained persimmon pulp
3 eggs
1½ cups sugar
1½ cups flour
1 teaspoon baking powder
½ teaspoon salt
½ cup melted butter
2½ cups milk
2 teaspoons cinnamon
2 teaspoons ginger
½ teaspoon nutmeg

Combine all ingredients and blend well. Raisins or nuts may be added. Pour into greased 9”x9” baking dish and bake at 325 degrees for one hour, or until firm.

      The peel of a persimmon contains flavenoids that have proven antidiabetic and antioxidant properties. They protect against the formation of advanced glycation end products (AGEs), harmful compounds that have been linked to both the onset of diabetes and to long-term health complications resulting from the disease.

      Persimmons are a good source of vitamins A and C as well as manganese, which helps the blood to clot. They also have other antioxidants, which help reduce the risk of many serious health conditions including cancer and stroke.
